
Why is it called “cowboy caviar”? I have no idea. But just make it, cuz it’s tasty.

Oh dear. You know the easy stuff is the best, right? RIGHT?!
A sweet friend of mine made this tasty, tasty dish and brought it over to my house. My life changed. It was like seeing the light. Except the light was a dip, and goes on a chip. That you scoop. So it’s more of a scoopable dip. Ok then.

My husband digs this dish. But, uh, why do they call it “Cowboy Caviar”? I don’t have even the smallest clue. This is what the internets calls it. I’m sure there’s some story… maybe it goes like this…
“Well, we rode all day through the western frontier, and somehow we can’t make a fire. And no can opener for this caviar. Darn. But hey, we have this salsa, some beans, corn, and hey, an avocado! Let’s mix them together, and maybe…. I know! Scoop it with these chips.”
Ok, or not. They totally didn’t have salsa on the western frontier. Wait…

Nevertheless, this stuff is like crack on a chip. Or by the spoonful. Or on top of a bed of lettuce. Or wrapped in a tortilla. And if you’re a vegetarian or vegan, or just starting out with the plant-based life, this is the dish for you. And if you’re a carnivore, you could eat it right along whatever grilled meat you choose. It’s versatile like that.

So, next time you are going to a party, try this little dish. Bring the chips and wear your cowboy boots. Just cuz.

- ¼ cup extra virgin olive oil
- ¼ red wine vinegar
- Juice of ½ a lime
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 15 oz. can low sodium black beans, drained
- 2 cups corn (or 1 15 oz. can drained)
- 2 cups salsa (a chunky pico de gallo, fresh if you can find it)
- 1 cup chopped scallions
- 1 avocado, diced
- Salt and pepper to taste
- Mix dressing ingredients together,and set aside.
- In a large bowl, mix beans through avocado.
- Add dressing and toss until coated and well mixed.
- Season with salt and pepper to taste.
